Lindera Farms Paw-Paw Vinegar
Lindera Farms Paw-Paw Vinegar is the kind of unique item that makes us love this Virginia maker so much. Made with paw-paws and honey, this specialty vinegar is fruity and tangy, and just like the fruit itself, it has notes of mango, banana, passion fruit and caramel.
What Does Paw-Paw Vinegar Taste Like?
When I tried this vinegar, I was expecting it to be quite sweet, but that's not what you get at all. It has a medium acidity level; the flavor is bright and balanced, sitting in the cozy middle between syrupy balsamic and more sharp, acidic varieties.
How to Use Paw-Paw Vinegar
My favorite way to use this paw-paw vinegar is in mocktails—I add a (generous) splash to sparkling water. You can also use it for:
- Vinaigrettes
- Grain-based salads (try it with quinoa, fresh peaches, and mint)
- Adding complexity to roasted squash or sweet potatoes
- Marinades
- Dressing up fresh fruit
- Rum and tiki-style cocktails
Why It's a Relish Fave
I've been fascinated with paw-paw fruit for years, but I've never been able to find it fresh, so this is the next best thing. Paw-paw is not grown commercially, nor does it ship well, so the fruit in this vinegar is foraged during the brief window when paw-paw is in season.
